This savory cornbread was actually inspired by my customers. I used to make a peperoncini garlic cornbread with the spicy peperoncini yellow pepper garlic olive oil, but customers would often read the label as pepperoni instead. After awhile, I realized that this was a great idea from my customers; pepperoni does sound delicious in cornbread! So I swapped out the spicy pepperoni pepper and garlic olive oil and swapped in the pepperoni with fresh garlic for this tangy, savory blend. This bread can be used for savory sandwiches, sliced and made into little pizzas and served with a cheese dip or fondue on game nights.
