For the Roasted Cauliflower Rye, the scalloped white blooms of cauliflower, gold or purple are plucked from the hardy fields of Western PA, roasted whole in the oven until tender, and then pureed into a creamy liquid. When added to the classic rye dough, the caramelized cauliflower boosts the savory elements of rye, turning it into a supremely delicious and highly nutritious sourdough bread.
