A bit of sweetness from bourbon-barrel-aged maple syrup and a touch of smokiness from olive wood smoked olive oil allow this buckwheat sourdough to announce its richest, most flavorful character.

*Literary Connection:  Novel Breads Eaters & Readers Book Club read the WWII novel, Five Quarters of the Orange, by Joanne Harris. In this novel, there are not only several allusions to buckwheat (specifically used in crepes), but there miraculously was a brief mention of "smoky sweet". While this novel did not originally inspire the bread, its connections were later discovered.
